    I love skirt steak and have fond memories of it being the only steak my Jewish mother would make. We grew up in Albany Park and there was a kosher butcher we went to. When we moved to Skokie in '67 he would deliver to us from the city.

    I find it's worth it to buy the meat at an actual butcher (of which there is 1-one- out here near Algonquin----Butcher on the Block in LITH). The cut bought at a grocery store just doesn't get tender. I use both low sodium soy sauce and Italian dressing ( the kind that rhymes with Fish Phone
    :lol: ha that was funny or whatever is on sale) mixed together, a higher percentage of the Italian dressing.
