Just returned from a trip to Colorado...which included 2 days in Glenwood Springs. Had 3 Mexican meals (none too extraordinary...mostly were there for the margaritas in the sunshine and mountains!)....but each place we visited offered gratis what they call "salsa slaw" served with nacho chips (along with the regular salsa of course). A really great mixture of cabbage, diced jalpenos, carrots and some other ingredients we were unsure of....

Tasted just terrific, a great contrast to the salty crispy chips....never had this before anywhere else (even in other CO towns)...wondering if anyone has run into this in Chicago anywhere....I am jonesing big time....
