I am willing to accept less than the "BEST" which is part of the title, in order to achieve another goal.
Every Korean BBQ I have been to limits ordering to "a full plate of sirloin", "a full plate of poolgogi", "a full plate of chicken", etc. These are fine if you have a favorite or two. When I have a favorite, I generally learn to make it at home.
The full plates are also fine in a group that will share them.
Are there any Korean BBQ that has samplers, like "plate of 5 kinds of beef", "plate of 5 kinds of foul", or "plate of 5 kinds of seafood", etc?
Or buffet style, you go up and use tongs to select individual pieces of meat, not full plates. Like the hibachi grill section of some Chinese buffets.
Even if I wanted to make at home, obtaining small portions of squid, different kinds of beef, duck, etc could be hard, expensive, or impossible. And very labor intensive (just washing the dishes).
This is either for dine-in, if I can go solo during off peak hours, or have them cook it for carry out.
Strong preference for NW suburbs, or nearby areas in Chicago, north suburbs or west suburbs.
