 Post subject: Made my own hot sauce

Hello all

So I decided to put some of my dried arbols to use this weekend by whipping up a batch of hot sauce. I used a Bayliss recipe which was essentially toasted sesame seeds, coriander, salt, some other spices, vinegar and some reconstituted arbols...

Couple thoughts/questions on the process:

1) Is seeding the arbols necessary? I'm guessing if you strain at the end of the process, you don't really need to worry about seeds. I did seed the arbols before hand and managed to burn my hands, eyes etc etc etc (wear gloves!) :shock:

2) I used apple cider vinegar and I feel like this is a weak point in the end product. Can someone recommend another vinegar? Perhaps just a better brand (I used the Heinz vinegar I believe). This flavor is too prominent at the front of the hot sauce.

Anyone else have experience with this?

IIRC, apple cider vinegar is substituted for some of the milder "fruit" vinegars by Bayless. You might try researching fruit vinegars and comparing the acid percentage, then using a dilute cider vinegar. Keep in mind also that because of the acid-base balance, this may adjust keeping qualities--Cathy2 will most probably have a good reference and advice about this--I haven't canned or preserved in years (other than fridge or freezer products for relatively quick consumption) and have passed on all my reference books. I just remember what are the things to be careful about:-)
