    OK, for a quick (minor?) change of topic: does anyone know where I can get unbottled, unjarred, I've-seen-them-in-plastic-tubs, matjes herrings? I totally *love* fresh ones, Dutch ones, that you can get all over northern Europe in late Spring, early Summer. I saw some tubs in an Ukranian grocery in MKE once, but up here in far upstate NY there's absolutely no chance of ever finding something like that. Soooo: anyone know an online source? I'm really starting to crave some matjes, after reading this thread!

    I would call Olsen Fish in Minnesota. Most of the lutefisk seen as church dinners comes from there.

    They are such a large producer, they may do it or know who they provide who may resell it to you.

    Last time we were there, there was a discussion about how to desalinate herring before pickling.

    In Chicago, there are barrels at some stores with herring fillets and whole fish. If it is remotely what you want, I could get it for you.

    Yup Richard, that's *exactly* what I'm looking for, fresh! Tnx! I'll have to await the start of the season, obviously.
    But I'm still thinking about the ones I've seen in Russian/Eastern European groceries, the ones in plastic tubs...

    ...here's a shot from some years ago of the refrigerated herring section (lower shelf, mostly) at Ted's Fruit Ranch on Devon. Ted's is not among the best cured fish selections in Chicago, but the only one I had a photo of.

    I have to admit I love both Cream style and wine Style Herring I believe I have tried them all and my go to for the last few years has been Crackovia from Canada available at local Polish Markets and Angelo Caputos.
