I was going to make a graham cracker crust with the goat butter, but this is a new recipe and the filling uses a whole lemon, so I thought I should go by the book and do the double-crust they recommend.

I think next month will be goat month instead. I already have diabolical plans in motion.

If anyone is still looking for rhubarb, they had some beautiful stalks at Fresh Farms (Niles). I can't remember how much they cost, however, but I can look at my receipt when I get home if you want. They also had them at the Whole Foods on Peterson last week, so I assume they're still there.

Well, neither do I, because again I planned on making a pie that required me to macerate lemons for 24 hours, which I realized at 1:45am. So when I get up tomorrow, I'll be making some crazy last minute thing—possibly chocolate, possibly orange, possibly in pie form.

But the marshmallows appear to have turned out great.

Now, time for second dinner and lots of wine.

Things aren't looking too good for me right now - my wife is stuck at work with no end in sight, leaving me with kiddo duty. If she doesn't get out too late I'll race over, but I'm not optimistic.

Thank you to Ms. Ingie for hosting today. Everything was delicious, and I had a great time seeing everyone. Here is the link to my strawberry rhubarb pudding cake:

I really only made minor changes: I did slightly more fruit (it calls for 2 c. of rhubarb, I think I did 2 1/2 c., about the same for the strawberries), cooked the rhubarb with a little more water than is called for, added a small amount of cinnamon, and sprinkled sugar in the raw on top before baking.

ingrid: i was just thinking about you, as i ate your delicious pot roast for dinner last night. i had frozen it because i had quite a few dinners to eat when you brought it. it's amazing how good your food tastes even without onions and garlic. and, yes, i stopped using my brace last week and i've started walking. i've had some setbacks, and i can only take short walks and can't do stairs like a normal person yet, but i'm making progress. i certainly hope i'll be there for the next dessert exchange. a few more weeks and i expect to be back to work. thanks for asking. joan

I think toria's was called Sex in a Pan. I wish I had taken some of that home.

Here's the recipe for my marshmallows. I thought the originals were a little stiff, so instead of three tablespoons of gelatin, I used three packets of Knox, which comes out to just under 1 tablespoon each. First I toasted coconut (I'm not sure how much). I used coconut from International Golden Foods that I think I picked up at Fresh Farms. It is known as dessicated or macaroon coconut depending on the brand; it's really fine and dry. I just dumped it in a skillet and stirred it until it was the color I liked. I greased the 13x9 with butter, dusted it with the coconut, buttered my hands to spread the marshmallow mixture. The next day I cut squares with a hot knife and rolled them in more coconut. If I cut them all the same, one batch would have made 48–64 marshmallows.

The first recipe, tossed just in powdered sugar, kept well in a covered container for weeks. These were bigger, fluffier, and not entirely covered with coconut so I'm not sure how long they'll stay fresh.
