Our baker at FIG is launching his own business, Beurrage. Beurrage will be selling croissants, danish, and yeast breads at the Pilsen Community Market this summer, but before they do they have to test the recipes, right? That's where you come in. Has anybody had Jeff's stuff at the farmer's market?

I was worried that Pilsen wasn't quite grown-up enough to pay for handcrafted pastries with real butter and organic flour, but so far I've been wrong. Jeff has been doing very well and everything that I've tried from baguettes, to danish, to bagels, to interesting savory loaves, to croissants, has been wonderful. I hope you go down and see him soon (and start a thread under Eating Out)!
