Tennessee themed Pitmaster Dinner.

Benton's ham, hocks and bacon, fried catfish with smoked tomato remoulade, BBQ spaghetti, big ol' spare ribs in the style of Rendezvous and Smoked brown sugar Moonpies by Bang Bang Pie. Yes, I know, we smoked sugar last Pitmaster, but it was so nice we are doing it twice.

Getting a little excited, should have our delivery of Benton's aged whole country ham, slab of bacon and hocks today. I imagine first order of business will be Benton's bacon "quality control" :)

Reservations noted for all in the thread, going to be a fun delicious meal.

Speaking of fun and delicious, Bang Bang Pie did a practice smoked brown sugar Moonpie for the Tennessee Pitmaster dinner. Wow, house made marshmallow and chocolate crazy good.

A great dinner. The appetizers were particularly spectacular. The biscuits were perfect with the smoked tomato butter, and the ham went perfectly with both the biscuits and the melon. The catfish nuggets were little gems, absolutely not greasy. We hardly had room for the rest!
