My half-assed guess as to why they named it so: Bedford Falls, the home of George Bailey's all-American bank.

While checking the name (all I could think of was "The Stratford") I came across this tidbit: "the restaurant’s name [comes] from the Bedford limestone used inside." I like your story better.
