To be drank at Solstice:

- 3 parts gin
- 1 part lemon/lime (to preference)
- simple syrup
- orange bitters

Shake over large amount of ice.
Strain into Tom Collins glass filled with ice
Top with club soda
Garnish with cherry
Continue until sunset

Wait. Why stop at sunset?! :D

I used to drink these a lot back in the day and they can be massively refreshing. Lately, when I'm in the mood for something tart and citrusy I've gravitated to classic daiquiris but I may have to break out the Collinses again. I've got a ton of gin on hand. Do you favor any particular gin or style of gin?

While I love lemon, this time of year I'd probably use limes simply because it's high season for them in regions nearer to us. Either way, you're not getting too much local citrus, so I suppose it doesn't matter all that much either way. :wink: And as your recipe points out, definitely do not buy a pre-made mix.

Worth a revisit, old friends at times can become suddenly interesting. It's just your classic booze/sugar/citrus with a splash of effervescence. A ton of gin? If you develop a taste for these I say perhaps a hundredweight by autumnal equinox.
