    As the saga continues, which it seems certain to, let's continue the discussion here.

    Former employees of Chicago-based coffee roaster and cafe chain Bow Truss plan to announce Monday they have filed a wage theft lawsuit against the company and its management.

    In mid-January, all local locations of Bow Truss shut down as the business struggled to pay employees and rent. The company’s employees said at the time they closed stores and refused to return after many had paychecks bounce. All but two locations — one in the Loop and another in River North — have remained closed.

    Crain's Chicago Business wrote:In a related filing in Cook County Circuit Court that seeks dismissal of Bow Truss' suit, Lemonis and his food holdings company, ML Foods, blasted Tadros' Chicago-based company for making "scurrilous allegations . . . in a craven attempt to find a source of funds to stabilize its faltering business."

    "Bow & Truss (sic)—having failed to run a successful business and having failed to fraudulently induce ML Foods to bail it out—now seeks to blame everyone but itself for its own mismanagement," the Feb. 17 filing says. Lemonis and ML Foods say Bow Truss supplied them with financial and other information that was "materially inaccurate and downright fraudulent." They complained that Bow Truss' debt "grossly exceeded the amounts it represented to ML Foods," that the chain was in default on most of its leases, that it did not own all of the property inside its coffee shops and that it "apparently skimmed money from its employees to cover expenses."

    They've been open a week as of Monday and are already running a good, consistent operation. Isaac takes his coffee very seriously.
