I accidentally picked a small delicata squash thinking it was an overripe pickle.

Does anyone have experience with using immature winter squash? I tasted a small slice, and it seems like somewhere been a cucumber and a zucchini in flavor, perhaps a little firmer and crisper.

What are you going to do with it? I picked an eggplant that I think is immature. I am going to chop it up and put it with my pork gulash tomorrow. It is very small but will all go in the pan with peppers, onions, tomatoes, etc. I do not think its harmful but I am not going to waste it.

I'm not sure what to do with it -- I could use some suggestions, and experience at how they are cooked up.
Most likely, I'll slice it thin and saute with garlic, or dice and put in ramen for lunch.

Well, it was delicious treated just like a zucchini: Sliced thin and sauteed with garlic (then eggs poured over them, a little manchego grated on top). Sauteed up nice and soft, didn't even peel it.

Sounds good. I chopped up my baby eggplant and put it in pork gulash. It disappears into the vegetable mix.
