    Does anyone know of a grocer that carries duck or goose fat on a regular basis? Would the Paulina Meat Market carry this item?

    HI,

    I was in Prague last year, I was looking for Crisco-type fat to make an apple pie. Instead, they had a very large refrigerator case devoted to duck, chicken, pork and goose fats with and without cracklings. My vegetable-based fat was treated like some fringe-type health nut product.

    So if Paulina doesn't have it, then I would look for Czech food markets.

    Paulina definitely has goose lard.

    Yes, Paulina sells goose schmaltz...mit griebines. It's in the refrigerator with the butter and eggs.

    Well, you know what GWiv says, never buy gribenes from a mohel. I think they also sell it without anything in it, just nice white fat. Yum, after the time I bought it for whatever dish I was making, I used the rest of it on things like fried potatoes and it was an instant back-to-Paris flavor.

    Fresh Farms Niles now carries goose "lard" (as it is labeled) in the self-serve deli case near the liver sausages.

    I have often seen duck and goose fat in the freezer at Treasure Island on Ridge in Wilmette. Maybe call first to check. --Joy
