    Esteemed forum, please forgive my replying to 1.) a six year old post, 2.) a question that was asked of someone else, and is not about shrimp dip, but this is so good I have to share it.
    Back in May, I came across this recipe for Fast Shrimp Spread from (Hints from) Heloise:

    Ingredients (with my substitution that makes it relevant to Calumet Fisheries):
    „ 8 ounces cream cheese, softened
    „ 1/2 cup mayonnaise
    „ 4 ounces tiny cocktail shrimp, drained and rinsed (I substitued 1/4 lb. of Calumet Fisheries smoked shrimp, shelled, cleaned, and chopped into approx.1/4" pieces)
    „ 2 tablespoons seafood cocktail sauce (NOT Calumet Fisheries; I prefer Teibel's)
    „ 1/2 cup finely chopped onion (yellow, white, or red)
    „ 1/8 teaspoon garlic salt

    Directions:
    Thoroughly mix the cream cheese and mayonnaise until well blended.
    Mash or chop the shrimp and add to the mixture; stir in remaining ingredients. Refrigerate until needed. It’s best served at room temperature with crackers and veggies as a dip or spread on bread as a sandwich. Do not let it sit out for more than one
    hour. This shrimp spread is a nice alternative to the usual dips found at parties

    The substitution of the smoked shrimp elevated this to another level. Hope you enjoy it.

    Weird Calumet Fisheries visit over the weekend. Most of the smoked shrimp were the nuggets of perfection we've all come to expect over the years, but a couple were a bit dry, which I don't think I've experienced there before. Smoked salmon was bad; mushy and had minimal smoke flavor. Decades of consistency obviously far more important. I won't hesitate to return.

    Apparently these signs have been up for a few months. I had no idea they made their own mild sauce. I wonder what the missing ingredient could possibly be.

    Calumet Fisheries, too long between visits. A quick 25 minutes from Peterson and Cicero (ish) on a quiet pandemic Sunday. Line out the door, longer when we left. Only 3 at a time social distance rules. Service attentive, informed, friendly, scallop dinner to share in the car for lunch, delicious, though fried food is not their strong suit.

    Shrimp, trout, whitish, salmon, what a catch. Just a taste of smoked whitefish so far, I let out a literal - audible ooooaaaahhhfuf happy sound at first bite.

    Gastro Obscura's Top 20 Places to Eat and Drink

    Five are from the United States with one very local Calumet Fisheries
    One of Chicago's last seafood smokehouses perfects a dying breed of fishcraft.


    Added to the list of places I'd like to visit:
    Delaware Delicacies Smokehouse of Hancock, New York
    At this small shop off a dirt road in the forest, the specialty is eel the owner caught and smoked himself.

    Reminds me of a place on the Iowa side of the Mississippi River.

    A restaurant on Staten Island showcases a different grandmother’s cooking every night.


    There are more in this article, though I can easily get to these places. :D

    Are you talking about Quality Fisheries, once located near, now located in Ft. Madison, Iowa? If so, I've been there (the original location). You're right it did look like the Delaware place, at least on the inside, and was definitely reminiscent of Calumet Fisheries. What an odd little joint. They were located kind of in the middle of nowhere, waiting to be stumbled upon by passing motorists trying to stay close to the Mississippi River.

    I picked up a few hunks of various smoked fish to bring back to Chicago. Pretty darned good.

    When I told them my ultimate destination was the Ft. Madison Diner, they said they provided them with all their fish, and to say howdy. I did, and the diner folks confirmed them as their suppliers.

    They've now moved within Ft. Madison's borders to a more modern building. If I ever figure out how to post pictures here, I'll pop in a couple of the original location.

    Hi,

    At the Iowa State Fair some years ago, we learned from Jim Duncan, an Iowa food writer, of an idiosyncratic Ma and Pa business offering smoked fish in Le Claire, Iowa. This is the first town in Iowa you encounter when crossing I-80 from Illinois to Iowa.

    When I last encountered them, this couple were in their 70s. They sold smoked trout, sturgeon and such, which they personally fished from the Mississippi River.

    To get to their business (and home, perhaps?) you parked your car, then walked across railroad tracks. This was not an official intersection, so you walked across and kept an eye out for a train.

    It would appear Fullmer's Fish may have gone out of business. I located Mr. Fullmer's obituary from 2017. From the number of children, grandchildren and great-grandchildren, maybe someone took on his business? Probably not, though I will look next time I am in the area.

    At least once, I brought one of every fish they smoked home for my Dad. I managed to overwhelm him with too much smoked fish.

    It may still be in business with some sort of partnership with Untappd.

    I have children that attend St Ambrose University, Davenport and another at the University of Iowa. I have been unable to locate Fullmer's. I too think they are out of business. A word of warning, there is a speed camera on I80 near LeClaire. Be very careful as you cross the Mississippi. I have had two tickets and of course, so have my kids!!!

    As for Calumet Fisheries. Was there on Wednesday. Ordered 2lbs of smoked shrimp with hot sauce. Most of the shrimp was awesome: Jumbo, hint of smoke, and very firm. Some, about an 1/8th of the order were small, mushy, and mealy. As for the salmon: no heads or collars available. Bought one large piece of pepper and garlic salmon and it was delicious. Very limited stock salmon and trout only. Of course, fried was readily available, but, I passed.

    I saw that and might go there for the chubs, though the price is startling. A few go a long way with my Dad.
