    Bob's landed at #14 on Chicago Magazine's recent update of the city's top pizza's about as quietly as its storefront announces itself on side street in Pilsen. I've been twice since the announcement, both times Saturday nights, and it's been less than half-full each time; they're still offering a BOGO pizza deal on weeknights.

    The pizza style is of no specific derivation--it's closest analogue is probably Domino's or Papa John's, which I say not to critique but simply to offer the closer approximation of the appearance and eating experience. (Though the pizza size is much closer to Dante's.) Ingredients seem to be its trademark: beer is used in the crust; the cheese blend has Swiss and Parmesan. There's a pickle pizza.

    When this pizza is on, it's really great--hardly elegant, but flavorful and balanced. Scarfable. But "on" is not a given: twice now I've gotten overcooked pies, torching the balance on the pie. We're not sure if we're going to give them another chance.

    This has been on my list since it opened March 2019. Bob is a friend.

    I finally decided I would drive over to Pilsen tonight and low and behold there is now an Old Town Location a few blocks away.

    The pizza is great.

    The sauce is lovely and it came with a crispness that I prefer.

    I will order again when I am not making my own.

    Bob is expanding. There is now a third location in Evanston, right outside my work. Looks like it is only Pick up and Delivery for now.

Whiskey Thief is at the same address, it would be news to me if they closed (it's an okay place IMO). I saw a Yelp! page for the new Bob's, but the owner posted a couple pizza photos, nothing revealing about the interior.

    Swiss is part of the house cheese blend? Like Provel in St. Louis? Doesn't sound too appealing to me.

    Provel is a processed cheese, though, so it's really melty which is good for some things but weird for pizza (IMHO). I love Swiss/Emmenthaler/Gruyere on pizza with mushrooms, or onions and bacon, so it's certainly not something I would ding them for off the bat. I personally think that type of cheese works well with pizza.

    Strong endorsement from me based on my first experience with take-out from the Evanston location. I don't think people have praised the crust enough. It doesn't have the char flavor of Neapolitan, but the center is very thin and the edges bubble up with a nice chew. It wasn't heavily loaded with cheese, but there was nothing strange or off-putting about it that would make you instantly tell it wasn't standard mozzarella.

    Since I knew this wasn't an attempt at anything close to a tavern-style I felt liberated to try pepperoni instead of sausage. It was fine, I try to mop up some of the grease no matter what. The crust is really what makes this.

    The pickup process is kind of clunky the way it's out of a bar, that was doing good business at the time (10pm, Sat). A waitress has to notice you, get the name for the order, go back to grab it, then get the card and go back to run it. Adding/moving a POS to the hostess stand will probably happen before long. Very pleased they opened in Evanston, despite the awkward within-a-bar wrinkle.

    I’m so mad it took us this long to try Bob’s. We got 4 pizzas last night, but only needed to pay for 2 via their buy one get one free deal on mon-thurs from 4-6.
    All four were great and they really give each pizza nice detail. The pepperoni has a nice amount of basil on it, the sausage comes with pickled onions, and we also loved the wild mushroom and stracciatella pesto pizzas. The folks working there are really nice; they even helped jump my car outside, as it was dead when I came out with the pizzas. Overall a great spot, and for me easily the best pizza in the Pilsen area.

    Felt compelled to post an update that the Evanston location is still, in fact, in business. I mentally crossed Bob's off my list of options with Whiskey Thief's closure, but that was in error. They might have dine-in for all I know, which will be a real selling point as the weather warms with the way those windows can be completely opened up. Panino's remains my choice for thin in Evanston, but Bob's is back in the roto.
