This is probably a long shot but here goes.
A few years ago when my wife was visiting Shenzhen, she told me about this hot pot she had where they cracked open coconuts and used the water/juice with some chicken stock as the soup base for hot pot. I think this style is known down there and also areas like Hainan.
Last night we found a place that does it (NYC) and I have to say...I like it a lot. Very good and also feels healthier as there's not the typical oil from hot pot. It would probably be popular in some US areas if people gave it a try.
I've found almost nowhere in the US with a few Google searches that do this. Only this NYC place, and maybe one in Philadelphia.
You never know though...anywhere in the city or suburbs that offer this style of hot pot even on a secret menu?
