    A note and a question:

    First, not all HD hot dog stands are Fixin' Franks. There are a few different operators with slightly different sources of dogs.

    Question: I thought wagyu beef was highly rated primarily because of the level of marbling in the meat. In making hot dogs, marbling is irrelevant. Fatty trim can be emulsified with very lean tough meat to give a similar fat content to starting with very well-marbled meat. Am I missing something that makes wagyu hot dogs better than other pups? Or is it just a gimmick?

    Your assumption about waygu is correct. Intramuscular fat is highly valued in beef products. If you are making hot dogs, the type of fat is most likely irrelevant.

    In other words, this is a marketing stunt to make more money and charge a premium price point! :)

    Since the popularity of buzz words in the food industry (Natural, Sugar-Free, Glutein Free, Pasture-Raised, Non-GMO, ETC..), Wagyu being the newest was initially limited to describing high end expensive Japanese Beef. Once the food industry got a hold of the marketing term Wagyu in America in any food space outside of high end restaurants describes the American Wagyu which is not much more expensive than regular beef.
