The chilaquiles verde at Mayfair Restaurant were certainly tasty the other Saturday morning. Verdes is only type they offer, I'd definitely return and I normally prefer roja.

I did absolutely nothing and it was everything I thought it could be.

Picked up a client early from O'Hare and had breakfast at the new"ish" Cozy Corner restaurant on Harlem, just south of Higgins & the Kennedy.

Chilaquiles rojo was tasty, good texture contrast of the tortillas. Not my favorite but certainly a good rendition.

Went on Friday morning to Le Catedral on Western. Ordered chilaquiles rojo, it was completely swimming in sauce, with an island of refried beans off to the side. Flavor was ok but not a fan of the soup my dish became.

I enjoyed a non-traditional chilaquiles skillet at Farm Bar (Wellington location) before a Cubs game: crispy layers with mandolined vegetables and sharp cheese, and a precious bottle of sweet house hot sauce. It came together perfectly. Their hot pretzel and cheese curds were also about 1000% better than Wrigley's.

I was recently at Cafe Tiztal and forgot the try this version with chicken. (so much for me making a mental note :) )
The chorizo version I did have looked nothing like the above photo and was very heavy on the cheese. I normally wouldn't go back but this pic above will make me go back one more time and try this version.

That photo was from 5 years ago, so you're more recent experience may be more telling.

I've had the chilaquiles with chorizo there a couple times in the past few months, and they were stellar as always and not too cheesy. Their salsa verde is unparalleled. They do a terrific job of keeping the chips crispy and not oversaturating them. You might want to ask for light cheese if you're worried about getting too much the next time!
