I don't get out much, but I thought I had heard of chow fun. Sure enough, a beef chow fun recipe is in Rhoda Yee's
Dim Sum, along with a recipe for homemade fun (the noodles, not the activity.) It's

2 c Swansdown cake flour
1/4 c wheatstarch or cornstarch
1 tsp salt
1/3 c oil
2 2/3 c cold water
Mix in order given until batter is lump-free. Ladle 1/3 c batter into an oiled 9" pie pan. Steam for 5 minutes. Roll up cooked noodle to store. Clean pan and repeat until batter is used.

I've made this in the very distant past. It produces a sort of soft crepe-like noodle. I wonder how authentic this recipe is, though, given that fun is supposedly a rice noodle.
