    Marijuana: Hot New Ingredient for 2011

    With legislation pending in California to legalize marijuana, it seems a matter of time before this leaf becomes a more acceptable smoke and, inevitably, an ingredient.

    Though the use of cannabis in cooking certainly predates Gertrude Stein’s charmed circle, here’s the infamous recipe for "brownies" from friend Alice B. Toklas’ cookbook:

    "Take 1 teaspoon black peppercorns, 1 whole nutmeg, 4 average sticks of cinnamon, 1 teaspoon coriander. These should all be pulverized in a mortar. About a handful each of stone dates, dried figs, shelled almonds and peanuts: chop these and mix them together. A bunch of canibus sativa can be pulverized. This along with the spices should be dusted over the mixed fruit and nuts, kneaded together. About a cup of sugar dissolved in a big pat of butter. Rolled into a cake and cut into pieces or made into balls about the size of a walnut, it should be eaten with care. Two pieces are quite sufficient. Obtaining the canibus may present certain difficulties.... It should be picked and dried as soon as it has gone to seed and while the plant is still green."

    Even if wacky tabacky doesn't become a must-include ingredient in 2011, it will surely be,with wine, another intoxicant to sample on trips to Napa Valley, in the heart of the emerging Emerald Triangle.

    HI,

    I loved the story 'Death in the Kitchen' from Alice B. Toklas book. It was a real life and death struggle without any knowledge of who the combatants were until the very end.

    Marijuana brownies, no thank you. Whatever stupid thing pops out of my mouth I like to do with full faculities. It's one reason why I don't drink, too.

    Don't know what arguments they're using for this round of the battle, but given the fact that California is bankrupt, it would certainly create both a new tax revenue stream and a huge surge in tourism. Of course, it might increase the number of pot heads living on the beach, so one wonders if it will be a financial boon or the end of California as a desirable destination.

    of course I have eaten this type of brownie, however the recipe for the one listed doesnt sound that good (too much filler).

    With that said I always considered cooking my stash a huge waste.

    I saw needle park in Zurich. I saw a person free base in the phone booth next to me in Amsterdam. It was not a pretty site in otherwise picturesque locations.

    Full legality for recreational use is a formality.

    Seen 2 weeks back-- guys on Hollywood Blvd. with posterboard signs in a style I associate with car washes and going out of business mattress sales -- "Anxiety, Migraines? Call Dr. Weed. Rx $60."

    PS, Cathy, not too long ago I saw two guys sharing a needle in the park in picturesque South Haven MI, in broad daylight with vacationing families around. It was a downer.

    The fat solubility of THC has been exploited for use in "special" foods literally for eons (back when my ancestors started mixing it with hot ghee & getting buzzed off of bhang)...so apparently sautéing up your wacky terbacky in butter, or mashing it up & soaking it in some olive oil, is actually a pretty efficient way to go. Plus you wouldn't blacken your lungs or make your house smell, as Lisa Simpson put it, "like the art teacher's office".

    Im just saying at its high cost per ounce its a pretty expensive ingredient. Not that I worry about that anymore, I quit when I had kids.

    Pretty sure "Dr. Weed's" transactions are taxed, as are the sales at the pot pharmacy down the street once the good Dr. provides the script for 3 Jacksons.

    Edit: I take that back! CA exempts prescription drugs. Dr. Weed will still have value after the legalization for rec use.

    Isn't one of the standard assertions by the legalization-niks that marijuana is the basis for 19th-century gruel, an extremely nourishing grain? Yes, here we go.

    There are many industries that require Drug and Alcohol Testing as a condition of employment.
    The legalization will not extend and override these requirements if Federal and I certainly hope not if State requirements.
    THC is a problem and hopefully will not be allowed as a recreational drug.-Dick

    LOL! I've also heard from a friend that this method is very effective but have no first-hand knowledge of it. 8)

    Don't say you didn't ask, but...

    If anyone has a true interest in some pretty detailed info of cooking with cannabis you could do worse than to check out the Cooking with Cannabis forum at icmag.com. While there's a fair degree of internet nonsense chatter it's a surprisingly good source of info from "hobbyists" such as yourselves. Probably not the best link to click on at work, so there's that. The multiple gardening forums are impressive, as a well detailed informational resource from people with serious botany skillz and decent amateur photo chops.

    You can add some to wine too! I have a friend who "knows a guy" in CA who makes a couple of batches every harvest (both kinds)
    5 gal. carboy + fermenting grapes + 2 oz of good stuff and off you go....
    Smells really good too!

    If only knew what I know about gardening now when I was 20 I would be a rich man nowadays :lol:

    I could see pot working really well as an ingredient in a Mole sauce, if it does get legalized in Illinois I would be first in line to buy a Marijuana chocolate bar from Vosges.

    I actually know that friend of a friend as well. From what I've heard it is indeed very efficient, but does give a very different type of buzz. Eating Marijuana gives a slow release of the THC resulting in a much mellower reaction that lasts much longer. My friend of a friend (of a friend) has expressed a preference for this. Either way, operating heavy machinery should be avoided.

    Interesting, I thought the marijuana brownies were a myth; I assumed the stuff would lose its power when cooked just like booze does. Interesting indeed!

    Most and almost all weed treats (cookies, lollipops, tea, grilled cheese) are made from the leaves clipped off after harvesting. Rarely will and do people make the treats with the actual buds b/c as you say its not cheap. Also there are two ways of cooking with the scraps, by making a butter or an oil, the butter is known to more more potent.

    I really dont get how people could be so brainwashed or out of touch with reality. It is a recreational drug. The biggest problem with marijuana is it being illegal and creating what is a violent battle for the control of it with Mexican Kartels and US gangs. But at the same time neither of those groups control the marijuana industry. As is mentioned above it actual requires skill and knowledge to grow this plant and the two biggest purveyors of it are Northern California hippies. Who I may add give everything to their towns economies by spending the money made and raising families and starting neighborhoods with parks, schools, general stores, bars, restaurants etc...and the other being Canada, where it just so happens to be the countries number one export. Now I dont think Canada has what would be considered a violent culture problem thats been created by weed.

    I'm 28 and I've been around weed and alcohol since my early high school days and I've never seen anything becoming a huge problem or situation b/c of weed. I have however seen violent actions, people getting very sick and death created from alcohol. Theres really no comparison and Im not anti alchohol but what sounds worse to you, those actions mentioned above that alchohol can cause or eating an entire box of girl scout cookies and watching eight straight episodes of Golden Girls b/c its oddly entertaining all of a sudden, only to pass out on your couch? Bad and violent people may smoke weed, but its not the pot that makes them that.

    anyway to keep this on topic I think maybe the worst thing I ever drank, top 3 anyway, was some ditchweed-infused vodka that some buddies of mine dreamed up way back when in what seems like another life now. So, you know, any budding entrepreneurs out there might just want to strike that off the list of potential menu items.
