    Egg salad sandwich made with duck eggs on Kaufman's Deli challah = breakfast. Quack quack.

    Hi,

    Out of mayo and not inclined to make any last night. I made egg salad with pesto (jarred from Costco) and a little bit of sour cream to tie it together. Since we were going green, I added some celery cut into small dice.

    Mom is eating it with crackers this morning for breakfast. Fortunately, she approves.

    Sopraffina now has a very delicious avocado egg salad, sort of an egg salad guacamole combo. A great variation.

    Yeah, thanks, Ronnie. I like the simplicity of this recipe. And no onions! Assuming they use Hellman's, next time I'm at Augusta I'll definitely order one :lol:

    And never thought of using a pastry blender to chop eggs. Genius move.

    You’re welcome. I don’t eat eggs as often as I once did ( nothing to do with price increases or cholesterol), but this caught my eye. Eggs were very helpful for my 101 lb weight loss six years ago. (20 found their way back)

    And egg yolks help prevent macular degeneration -- so another good reason to eat them. And yolks also actually help lower cholesterol, for those who are concerned. Not to even culinary speak of versatility. I'll be very sad if eggs become unaffordable or unavailable.

    Common commercial kitchen hack for lg batch egg salad or guac is placing a (grid) wire rack over lg mixing bowl and press product through w the heel of hand.

    Egg salad tea sandwich style. Soft butter spread on inside of both bread slices. Chill for 30 minutes before cutting into desired shape with a thin blade slicer. Wipe blade clean between each slice. An occasional knife dip into very hot water for more precision. Use contrasting color/ flavor breads.

    I would have assumed Dukes. We switched when we moved Southeast and have never looked back.

    Yeah, it seems like some in the south like Dukes and some like Hellmans. And never the twain shall agree. I'm with you on Dukes. Aldi's Burman's seems to be a pretty good substitute for Yankees. I've always hoped for one of those Cooks Illustrated analyses where they measure the viscosity, pH, sugar content, etc of mayos.

    i don't like egg salad with large chunks of egg whites and yolks. i use a hand held rotary grater to grate the eggs. i do like to add a little onion, s&p, mayo, an undetectable amount of tabasco and sometimes curry powder. i like to eat my sandwich on a soft bun with roasted red pepper (it used to be the wonderful Martin's potato bun). it's great for breakfast, lunch or dinner.
