    We have been enjoying some white kimchi lately. White kimchi is produced without hot pepper flakes and has a very light and refreshing taste which is nice for summer. We have had the Bitgoeul brand which, according to the label, is made on Ravenswood. Any other brands or types of kimchi you might suggest as being particularly appropriate for summer?

    We made cold white kimchi soup a couple of weeks ago using this recipe: http://myfabulousrecipesbackup.blogspot ... -soup.html

    The term Na-Bak apparently refers to the square shape that the nappa and other ingredients are supposed to be cut into. The recipe includes pear and apple, which brought sweet notes I was not accustomed to in kimchi. I don't have much of a sweet tooth, but the combination of the sweetness from the apple and pear with the saltiness of the kimchi worked for me. I would be sure to use a good Asian pear which can stand up to the fermentation process.

    This is a nice cooling soup for a summer day and we will make this again using this or another recipe. There are a number of cold, white Kimchi soup recipes on the web. I noticed that David Chang even has a white kimchee recipe that calls for 7 Up: http://www.foodandwine.com/recipes/spar ... ite-kimchi That recipe appears to be for white kimchi rather than white kimchi soup.

    Hi,

    I just learned, or dare I say relearned, of white kimchi over the weekend. I have been itching to get to H-Mart ever since to buy some.

    I am sorry I overlooked the information in this thread seven years ago, though I do appreciate it now.

    The Mother In Law's brand of kimchi makes a white one that is great. I find it at Fresh Market on Western regularly. Whole Foods carries the brand but not always the white.

    H-Mart and Joong-Boo Market both usually have white Kimchi in stock. The smallest jars are not always available, but quart and gallon jars are always there.
