Post #123 - December 17th, 2020, 11:55 amI went with a choice 8lb flat @ 6.49/lb at Costco - Orland Park. They had full brisket @ around $3/lb. Both were not frozen.
Frozen flats were available at Sam's club. They looked like ingredients for dog food.
Wings were disappointing at Costco. The 7lb bags were no more. The replacements are 10lb bags with a 8% salt water brine. Other sources look like they have 10-15% water/brine added.

I have always gone with the full prime brisket at less than half the price. You can always cut the flat off if that's what your looking to cook, and then use the point/rest for something else. Point is always good mixed with other cuts to make ground beef, or used in a slow cooker like pot roast. I have had consistently great success with the Costco prime briskets in many different uses.

No, I bought neither brisket or beef ribs. Meat wise, walleye pike for dinner that night and St Louis ribs for the next (yesterday) We have house guests the last ten days and I'm buying a little more food than usual. Ribs, slaw, potato salad, 7-pepper BBQ sauce for 8-people last night, was fun.
