    Hi Folks,
    Evil Ronnie here, and back in town, sort of. Any info on where I might find (a) real dry cured country ham slices, biscuit slices, hocks, sliced or whole, seasoning meat, etc…. and (b) Guanciale, in the NW burbs?

    Hi again,

    Attention: All Y’all Yankees…

    Today, I found Burger’s dry cured Missouri center cut ham slices at Woodman’s in Buffalo Grove, along with sliced cured jowl. Same ham we used at Dean Fearing’s Mansion on Turtle Creek kitchen in Dallas 25 years ago. Picked up 10# White Lily and some Sechler’s ( of Ohio) candied pickles. I discovered these pickles at Treasure Island, many years ago, and have seen them at Paulina Mkt. also scored cream of tartar which seems to be almost extinct.

    No luck yet fondimg Guanciale. I guess a trip to Harlem Ave is in my future. I found some nice looking pancetta at Tony’s on E Rand Rd in Mt Prospect.

    You may want to call Poeta's Italian Food Market in Highwood, which is 20 minutes away from Woodman's in Buffalo Grove.

    Give Forza Meats in Glenview a call to ask if they have guanciale if the location is more convenient than some of the other potential sources. Probably only a 30ish% chance they have it though.

    Homestead Meats definitely has guanciale (not cheap).
