My paternal grandmother was 1st generation German American. Wilted lettuce salad was a staple in her household and by the time I was about 10 years old I loved them. Her version was very vinegar forward with a slightly sweet undertone. She used it to dress lettuce fresh out of her garden. I have made this style of salad sporadically over the years as it is highly nostalgic for me and I enjoy them immensely. They are a treat.
A few days ago I was perusing an old cookbook* and came across a recipe for a creamy version of the dressing. Curious, I gave it a try tonight. Basically, render bacon, add flour and stir. Combine sour cream, vinegar, sugar, salt and cracked pepper. Add to bacon. I had some pasta cooking and thinned it a bit with some of the pasta water. Tossed with torn iceberg lettuce. So good that my 9 year old who allegedly does not like salad ate a bowl. This hit all my comfort buttons.
