I do not know how much information is in brand because in my experience the brand has rarely been shown at retail.
Age, though, is important. The cheese becomes drier, harder and develops more of the nutty flavor with more age. I suspect that 24 months is the sweet spot with diminishing quality increases per month while price seems to go up linearly. Perhaps some noneconomist with more cheese expertise will chime in.
