    I cook on a crummy electric stove Buddy. But for cream or merely blended soups, I whip out my Super Vitamix blender and chinoise. The texture and viscosity are amazingly more refined than the stick produces,

    Whole beef shank is once again $1.99/lb at Tony's this week. For fans of bony meats, also pork neckbones 99¢/lb on a 3 day sale there.

    I've had really good luck with vac packing and freezing soup pot size portions of those sliced shanks. Handy in this weather!

    Yup, spotted that. Going through other sale papers today, I saw shanks were down to $3.99/lb. at other places, so I checked Tony's on the hunch they might be even less. Sure enough, there it was for $1.99/lb. Headed over today to pick up a bunch, then we'll schedule our next Sweet & Sour Cabbage Borscht cooking session for the near future.

    Note that shank is only $1.99 if you buy a whole (sliced) shank, about 8lbs or so. Packages of about 3-4 lbs (4-6 slices) are $2.99, packages of about 2 lbs (2 slices) are $3.49, individual ones from the butcher case are $3.99 and there were a couple packages on the tall meat shelves at $4.49!

    I complained to the butcher, and he marked a 2-slice pack down to $2.99/lb for me.

    I bought three full shanks; about 24lbs. A tad more than we need for four large pots, but the smallest slices, toward the end of the shank, have relatively little meat. They'll still yield plenty of flavor, marrow, and richness, so no regrets.

    How many people are you feeding, or how many freezers do you have?
    I'm trying to thin out my fridge and freezer for some upcoming travel, but wanted to braised today. 2lbs was just enough for dinner with a little extra for lunch, using Serious Eats' Red Wine Braised Beef Shanks cut in thirds, which led to shorter cooking time at just about every step, and a splash of sherry vinegar at the end to perk it up.

    We make four large pots of soup. It works out to roughly 14 gallons, split up between three households, plus some extra containers we give away to family and friends. If I ever figure out how to post photos here, I'll show you the stacks of containers we end up with at the end of the day.

    The process is a once a year, full day family affair, we've been doing for about ten years now.
