This weekend I baked a very belated birthday cake.

Baking gave me time to think. It's been a crazy year for the Zorks - a lot more ups and downs than usual and some scary stuff happened. Despite it all, everyone is in a good place, and the number of people living in this house is way down - which is a good thing.

So - the cake - I have a ton beautiful cookware, but it's all designed to cook for a CROWD - big Dutch ovens, stock pots, 10 inch rounds, 9 x 13s etc. But I only own one really crappy 6 inch springform. We can only eat so much cake, even great cake, so I went with the six inch. Of course it leaked and baked unevenly, and I had to hold batter while the first and second layer baked, resulting in a poor rise on that last layer.

But you know what - I'm so glad to have a reason to bake this cake, and, honestly - it tastes great anyway. However you better bet I'm adding some nice six inch cake pans to my wish list.

    What pans do you recommend?

looks great! i use the 6 inch springform from smitten kitchen's excellent "tiny chocolate cake" in her first cookbook, which is very rich and one should only have around in 6 inch quantities. for bigger cakes, i really like daddy o aluminum pans; i have a set of 3 9 inches for layer cakes, and same of 8, plus their jellyroll and rectangle false bottom, and they all work well.
