    I recently “discovered” Makowski’s Real Sausage while reading a post on LTH by G Wiv. I looked for their Maxwell St polish at our local Pete’s and Costco without luck, so, out of curiosity I drove to their facility at 2710 South Popular and purchased their Maxwell Street Polish, smoked Polish, and beef hot dogs. They also make and sell brats and several other products. The polish sold at Portillo’s are sourced here, I’m told.

    I’ve cooked the two polish and the hot dog on the grill and I’m very impressed with Makowski’s products. They’re fresh and well seasoned, and the casing has a nice snap and isn’t too thick. Not at all greasy. Delicious! Absolutely as good or better than any other I’ve had.

    At their facility you have to pay cash and buy in 5 pound quantities. Good to have a vacuum bag sealer and freezer space. Some of the products are available at some Pete’s grocery stores and at some Costco stores, also some other locations listed on their website.

    Makowski’s Real Sausage has existed for 100 years. Family owned and woman owned located between Ashland and Halsted just west of Chinatown. Good stuff from a Chicago institution well worth seeking out.

    That's the address and I believe the hours are correct. It's a great resource, but yes, cash only on the premises. They do also theoretically make a wide variety of sausages, but they don't always have the less common ones (Thuringer and Knackwurst being the ones I'm interested in). They kinda go and look "in the back" for what they have if it's less common, no regular retail area (at least, last time I went, which was a couple years ago now).

    They also supply most/all of the Home Depot hot dog stands with their sausages, and their regular hot dogs are quite good, too. German sausages that I've had have been as good as Paulina, although given the quantities, I've mostly had them from frozen.

    They also provide lots of custom sausages to restaurants around town--I think the Duck Inn's duck fat sausages are one prime example.

    With Makowski's on the northern part and Vienna bookending the south, we are fortunate in Bridgeport to consume our sausage at both ends.
