    Anyone familiar with/seen this cheese in Chicago?

    I can definitely come up with substitutes but would like to stay true to a recipe I am planning to make next week if possible. A quick perusal at Fresh Farms Niles this week left me empty handed but I’ll have a bit more time next week to dig deeper.

    I miss The Cheese Stands Alone as I know they would have helped me out with advance notice…

    Nope. Tried Vesterhavs & Vesterhavost and came up empty.

    Will probably have to go with Appenzeller…

    Vesterhavsost
    Vesterhavsost is a Danish semi-hard cheese made from pasteurized cow’s milk. It is sometimes called the Danish version of Gouda or North Sea cheese, referring to the fact that it is produced from the milk of West Jutlandic dairy cows and that it matures in the salty North Sea air for 26 weeks.

    I have seen cheese labeled 'North Sea' at Murray's Cheese in Mariano's. I even bought some to try recently.

    2 more possibilities: Garden Fresh (only place I've seen Ukrainian cheese, whatever that has to do with the price of tea in China) and Shop&Save. Also worth a dime for a phone call to Montrose and Rich's. Wonder how you say Vesterhavs in Polski
