Unless there's a plague I usually work out of town during the holidays. That being the case I was approached by a few friends to prepare Beef Wellington for Xmas and it went so well I thought I'd carry it over thru NYE. So if you're interested in me searing you some Chateaubriand and slathering it with horseradish, duxelles and foie gras then wrapping it in Parma prosciutto and puff pastry let me know. You pick up and finish it in your oven. Meat thermometer required. Served w/sauce bordelaise. $50 per serving.
