    Came across Refika a few days ago, watched 7-8 videos and going to make Iskender Kebab Inspired Cauliflower Recipe tonight.

    Refika's Kitchen has 126K subscribers on her English Youtube channel and 1.61 million on the Turkish Youtube channel, over a million Instagram as well. Website

    Good energy, fun, fantastic fresh looking food, with an interesting take, not fussy. I'm sure LTH cauliflower fiend Ronnie_S will be interested in how this turns out.

    And I love Refika. My first encounter with her was on another youtube segment on meatballs, on Alex's French Guy Cooking channel (also a great channel).

    Watched the video, took notes and cooked the Iskender cauliflower for dinner tonite. Simple, fast, cheap and delicious it was. Caramelized cauliflower w/garlic and minced beef. I'd sub ground lamb but Mrs. Jazzfood wouldn't go for it. Refika said to use tomato or pepper puree, so I ended up using gochujang which worked but wasn't traditional of course. Mixed w/brown butter, oregano and a bit of water and whisked to emulsify, it was reminiscent of wing sauce. Dolloped w/roasted garlic-yogurt, it's a keeper. Thanks for the heads up Gary and Ronnie (as per norm).

    I agree. He does some interesting stuff, though he sometimes ends up diving deep into irrelevant details, like when he spent nearly 2 full episodes of his recent meatball series trying to create perfectly round balls. Otoh, he covered a lot of pretty cool ground for that series.

    Moving to another continent, this clip is probably no secret, as it has nearly 36MM views but it was new to me and quite awesome in many respects . . .

    For those who do not already know, Farmer E is awesome. His artfully produced videos document his life in Norway as a relatively new-at-it water buffalo rancher but he covers a variety of other related subjects, as he does in this recent video in which he compares his family's 'ancestral home' stand mixer to a more recently purchased version of the same model . . .

    The more I hang covid style at the house in front of a computer screen the more I appreciate the vicarious pleasures of upbeat spicy heat loving Mark Wiens of Migrationology.

    His latest Chiang Mai video a real treat. Bonus points as Mark W is starting to eerily resemble Shaggy Rogers from Scooby-Doo.

    That reminded me of one of my weirder travel finds, the Bugles chocolate bar. I ended up buying as many as I could find and was very sad when they finally disappeared for good.

    I've been binge watching something called the Chateau Diaries. Its not strictly food but many of the episodes are about food and gardening. Apparently Brits buying derelict Chateaux in France is a thing. Its and utterly charming and positive series about these folks trying to renovate the Chateau La Lande. I think many will find it interesting. There are over a hundred episodes to watch. There is another related on called Doing it Ourselves. A different chateau, a different family.

    Here is another one I have been binge watching. Positano Diaries.
    They live in Positano, raise their own vegetables and chickens. Live high up in the hills.
    In this episode they show how they can tomatoes. They cook lunch everyday and its always a variation of pasta, gnocchi or risotto with various vegetables and they don't seem to eat too much meat.

    I've also been watching a lot of Kristin's videos. They are a German couple in the UK. Very charming and do some cooking mostly gluten free. They also visit place in the countryside. Here she makes lemon drizzle cake.

    Just finished the very good 3-episode (45-min each) Taste of Israel on YouTube. The host is Tom Franz, a German national who fell in love with Israel, moved there and became a celebrity by winning their MasterChef TV reality show. He covers a lot of ground visiting markets, farms, artisanal producers and restaurants all over the country. No recipes but an expansive look at their vibrant food cultural and broad influences from throughout the region.

    There are two things that I like about this guy.

    First, he one of the best outdoor kitchens that I have ever seen and actually knows how to use it.

    Second, much of the food that he prepares in the food we are not getting during the pandemic. He demystifies it and makes it easy to prepare.

    Oh, don't get me wrong, I'd eat it, and I haven't been more than just a bit tipsy since college... But it sure does read like late night binge food. Serve it from a food truck in Wrigleyville after midnight(non-pandemic) you could make a mint.

    I watch a lot of Mark Wiens and SortedFood. My bucket list has eating street food in Lebanon with Mark! On a slightly related sideline, I also catch up with Molly Schuyler occasionally. She is a competitive eater with an interesting history, but many of her videos are just her in her home or a local restaurant, doing a personal challenge. If this kind of thing makes you feel queasy, avoid it, but it's like driving by an accident, you just have to check one out, and an hour later, you're still watching!

    One of her latest is her and a friend eating 40 pounds of baked beans. Yes, I said 40! My stomach hurts just watching.

    Here is another one of my "off the beaten path" YouTube series. Chef Mission featured Singapore chef Robin Ho visiting four Singaporeans living in India, Thailand, Malaysia, and Vietnam who are working various relief positions. He visits each of the individuals, shows their work, and then feeds them a home cooked meal from Singapore.

    The premise sounds rather hokey; however, the stories are truly compelling.

    Steve Dolinsky has a newly refreshed YouTube channel. Three minute food centric videos. Watched

    and immediately went for Lahmacun, yogurt drink and tea. Really liked the place, plus I'm digging Steve's new stalagmite style haircut. :)

    Bonus: Turkish cafe is across the street from Như Lan’s Bakery and HarvesTime Foods.
