    Epicurious has announced that it will no longer print recipes that include beef as part of a conservation stance.

    I'm skeptical as to whether this will last. I give it 9 months.

    Here's a little more on the subject.

    The Guardian wrote:The decision to cut cows from the menu was announced on Monday, but the organisation is confident readers will not miss the meat – because it actually made the change a year ago and has not published a beef recipe since.

    I doubt I've looked at Epicurious in the last year. Even if I had, I doubt I would have noticed the absence of beef. Is it true this change was instituted a year ago, and did anyone notice previously?

    This seems a little silly and poseury for a couple reasons: 1. Most people who follow Epicurious probably know how to cook beef and don't really need new ways to do so.
    2. Cutting down on beef consumption doesn't necessarily mean never eating beef. New recipes featuring beef as a flavor ingredient (Stir fries, soups, hamburger pizza, etc etc) rather than a 32oz prime rib emperor's cut would be a more positive and persuasive step.

    And even if they did take down old beef-related content, I still wouldn't have enough hours in the day to keep up with my own work and at the same time wade at any significant pace through all the online and offline recipe content, beef and otherwise, that I have available, so this will have zero effect on me. If it makes the Epicurious staff members feel better about themselves, fine.

    But for them to suggest that people not noticing proves it was the virtuous or at least the tuned-in-to-the-zeitgeist thing to do doesn't persuade me either. Blogs and websites and the like on all topics sometimes drift toward posting things that interest the sites' authors but don't interest me (example: a recipe website I used to check regularly that's gone all keto lately), and in proportion to my lack of interest, I just drift away. I don't bother writing a message to complain.

    I had to laugh at this comment by a Washington Post columnist that I just read:

    "Cows are 20 times less efficient to raise than beans,” the editors explained. Maybe so, but beef tastes more than 20 times better than beans."

    The columnist goes on to say, "Canceling beef recipes won’t make a dent in climate change, and this stunt reflects a fundamental misunderstanding of how to effectively address the real crisis."

    I am not interested in their social engineering. There are plenty of other websites to derive information.

    Katie- Thanks I was able to read it. The author did not really give a lot of alternatives that are better for the climate than eating beef. I agree though that even eating less beef is going to help, and try to steer away from supporting factory farmed beef. I don't eat very much beef myself, but I do eat seafood and chicken fairly regularly. When I do eat seafood and chicken though, I don't usually eat more than 4 ounces. I eat chicken sausage fairly regularly, and I especially love Amylu sausage.

    On another internet source, they suggested Epicurious may be getting financial support from one of the plant-based meat substitutes. They felt if they ban beef, why not dairy, too.

    There are so many sources for recipe ideas far more interesting than Epicurious, I don't need it.

    The NPR radio program 1A is devoting an hour show to the Epicurious beef story tomorrow (May 5). 1A is on at 10am and 9pm on WBEZ in Chicago.

    Speaking of the Beef ban by Epicurious; Eleven Madison Park in NYC is becoming plant based fully.

    Eleven Madison Park, one of the world's best restaurants, is going vegan

    From the article:
    Eleven Madison Park, one of the world's most celebrated — and expensive — fine dining establishments, announced plans on Monday to operate as a plant-based and almost fully vegan restaurant, becoming one of the highest profile names in hospitality to stop serving animal-based products.

    When Eleven Madison Park reopens this June in New York City, its $335 tasting menu will be entirely derived from "vegetables, both from the earth and the sea, as well as fruits, legumes, fungi, grains, and so much more," Daniel Humm, the restaurant's chef and owner, said in a statement. Milk and honey will still be offered for tea and coffee, Humm said, but otherwise the menu will be fully vegan.


    When Duffy ran Grace; he had a Flora and Fauna menu. I didn't see that in his new venture. I hope he brings it back. I am sad that I never got to taste Charlie Trotter's Vegetarian tasting menu. By the time I became financially solvent to afford Grace; it closed. The only "upscale" vegetarian I have had is Green Zebra and Bad Hunter. Both were really good, especially Green Zebra. I hope some places in Chicago take note of this and at least start offering this as a choice.

    When I was flipping channels this morning, I noticed on one of the news channels that I usually do not watch that they were talking about Eleven Madison Park. I just looked on their website, and I did not see it being mentioned. I missed most of it, and so I don't know what they were talking about.

    Elizabeth usually has a vegetarian option on their tasting menu, their pandemic pickup only sometimes does (but dining reservations are coming back!)
