    I'll be there with Teresa, also RSVPing for fropones +1. The 4 of us traveled to Europe this summer and brought back some ideas. There's a red schug from "L'as du Falafel" in Paris that stands out as a vivid food memory and I'm going to try to recreate that flavour memory. As for the accoutrement to compliment the main dish if the sauce, I'm going to do a chicken shawarma on the spit. Fropones and ±1 will do some freshly fried falafel. We'll also have some lavosh, grilled and fresh veggies, and a yogurt sauce to make some mini wraps. Yes we did Middle Eastern a couple years back, but when inspiration hits!

    Teresa will be making a recreation of the Basque cheesecake we went crazy about in San Sebastian. I'll probably bring a secret stash of sausage that I smuggled through customs. If you know the magic word you can have a taste.

    Hi all,

    A careful reading of the FPDCC's Rules & FAQ and more importantly, Page 7 of their Special Use permit form, indicates that canopy tents smaller than 10' x 10' do not require any specific permission or special permits. We presume that 10' by 10' refers to width and length, so if you'd like to bring one that falls within these parameters, we think it should be ok. That said, it's probably best to print out and bring page 7 of the Special Use permit form (and a tape measure) in case there are any issues with enforcement at the venue.

    It seems that the worst-case scenario would be that the FPDCC police would ask you to take down the tent if they feel you are in violation of the rules. But perhaps, armed with the print-out and a measuring device, that could be averted.

    Whatever food you choose to bring, please make sure to keep hot food hot and cold food cold

    Over the weekend, I learned a tip for transporting hot food from Bruce, which I tried yesterday when bringing freshly smoked hot links to the Katrina dinner:

    Preheat your insulated cooler by pouring in a quantity of boiling water. In my case, I boiled 1. 5 gallons water and poured it into the cooler. Bruce advised to wait five minutes, then pour out the hot water, wipe it down and put in your food. For additional insulation, you may also wrap the food container with towels fresh from the dryer. Any empty spaces fill with crumpled paper.

    Using this method, I brought 20 pounds of smoked hot links on a 90 minute trip ready to serve piping hot. Bruce indicated this could hold for about 4 hours.

    This is not only a great idea when transporting food. It could also serve you well when having a party to store warmed foods until ready to serve.

    Once I had tamales finish steaming in the container, so this works beautifully.

    Thanks for posting, C2. Not sure if I'll go the tamale boat route, as it would require two containers to be kept hot, and with the lids constantly being opened and closed, heat would be lost fast. Thinking...

    yeah, i'm with panther: tamales still in their husks, with some water in the bottom of the pan, covered up, over sterno, should be fine.

    For the sake of being different, SueF is still doing a slab pie, but a savory one.
    So I'm thinking I need to do something sweet, since we're reversing roles. I don't have a plan yet, though.
