I've plated the previous incarnation of that dish when I was in that kitchen and that's still THE most gorgeous caviar I've ever seen. And tasted - had to taste it plenty too.

I've plated the previous incarnation of that dish when I was in that kitchen and that's still THE most gorgeous caviar I've ever seen. And tasted - had to taste it plenty too.
I was thinking all afternoon -- and even discussed it with Julie -- about how hard a dish like that must be to plate. It was sure as hell exquisite to eat . . . one of the finest seafood dishes I've ever had in my life (not just "lately").
