Prime brisket was in stock at the Randhurst Costco at $4.29/lb. They were all massive too, 17-20lbs. Rub was basic, just salt, pepper, and my favorite sub-dried chili powder.
Two batches of charcoal on my WSM ran 11 hours and got it to 194F, lots of wobble and bark. Sliced and reheated after a night in the fridge, served with steamed broccoli and smashed potatoes made with tallow rendered from trimmings. I alternated bites with chili crisp and guacamole salsa (Jewel house brand). Most of it is now portioned out in packets in the freezer. A little left over went into tacos for lunch.
