    Still working with my 10" nonstick Scanpan. Another Saturday morning, another leftover-filled omelet . . .

    Started the day with another leftovers omelet, this time working some whole-fat, Greek-style yogurt (partial, leftover container) into the eggs . . .

    Leftover Sausages, Cheeses & Shallot Omelet
    Garnished with chives and served with some toasted/buttered Polish rye bread. I couldn't perceive much of a flavor difference with the yogurt but I liked the fluffiness and tenderness it brought to the eggs.

    While I like the good stuff, I'm also kind of sucker for low-end lunch meat. Saw something recently at Fresh Farms I'd never seen before -- Ham Bologna -- and decided to buy it. It was pretty flavorless and had more going on texturally than it rightly should have. But it came to life a bit after being heated in the 10" nonstick Scanpan. And since I'm incapable of throwing anything away, so into today's omelet some of it went . . .

    The surface of my Calphalon Signature omelet pan was starting to get damaged after about one year even though I only used a silicone spatula in it and cleaned it with no abrasive materials. In any case, Calphalon customer support is really great. They are shipping me a replacement pan and said that I don't need to ship my old pan back.

    I just realized that the spelling in the title of this original post was incorrect. Omelet is the standard American spelling and omelette is the British English/French spelling.

    Very nice to know they stand behind their products. Calphalon were the pieces we registered for when we were married and now, 30 years later, a few are still in use, though they're not in the greatest shape.

    I started out the day with an experiment gone wrong, very wrong. Recently saw a TV ad for some mung bean-based egg substitute and my curiosity got the better of me . . .

    Faux Egg Omelet
    I should have known better but I filled this thing with some good Newsom "Preacher" ham and cheddar cheese. Good ingredients after bad. Used the 8" Scanpan nonstick for this. The omelet took really long time to congeal. Once cooked, it looked and felt pretty good but there was a strong off note, somewhere between fishy and catcher's mitt. Not good. We all tried a few bites and being who I am, I just couldn't throw the rest away. But we don't have a dog, so I probably will.

    No, it would be for a naughty dog, only and I don't know any of those. :lol:

    Speaking of which, I had to start the day by exorcising yesterday's demon omelet. So, I basically re-did it, this time with real eggs . . .

    First two-omelet weekend in quite some time. This morning, opted to RID myself of some leftover sausage that I grilled a few days ago. Used the 8" nonstick Scanpan this time . . .

    2022 starting pretty much where 2021 ended. 10" nonstick Scanpan, a trio of eggs, and doing my best to RID myself of various odds and ends in our fridge/freezer . . .

    Cheese Omelet Garnished with Chives
    Cooked this in the sausage renderings. Served with buttered/toasted harvest grain bread and homemade sausage patties (the end of the freezer stock leftover from the batch I originally made for our Thanksgiving dressing). Was happy to use it and various cheese-ends up.

    Still going strong on the 10" Scanpan nonstick. I've had it for years, use it frequently and it still doesn't seem near needing to be replaced. It cooks very evenly, and the nonstick surface performs well and is quite durable . . .
